Carrot salad with hemp seeds

That’s why we at Magu Space suggest adding carrot salad to your diet enriched with hemp seeds. Carrot salad can enrich our menus all year round and is probably one of the most versatile vegetables. Carrots are rich in carotene, which is converted into vitamin A in the body – the key to good eyesight. Also carrots contain Vitamins C, D, E, B, calcium, iron and other trace elements help to strengthen the body, immunity and maintain a good metabolism. The addition of hulled hemp seeds to the carrot salad will provide essential omega-3 and -6 acids, which cannot be produced by the body and must be obtained from food. For the carrot salad you will need:

  • 3 larger carrots
  • 3-4 v.s. 2 tbsp shelled hemp seeds
  • 2-3 tbsp. 2 tbsp pumpkin seeds
  • 2-3 tbsp dried cranberries
  • 1-2 tbsp lemon juice
  • 1 tbsp. honey
  • Cold-pressed hemp oil
  • Pepper
  • Salt

Peel the carrots, grate them with beetroot grater or straws, as you prefer. Add the hulled hemp seeds and dried cranberries and pumpkin seeds. In a small bowl, combine the lemon juice, honey, cold-pressed hemp oil, pepper and salt, then pour over the grated carrots and seeds and stir. The salad is ready!

This carrot salad is perfect as a snack with a slice of bread, with steak or poultry dishes, or even to spice up sandwiches!
